Breakfast Techniques . Flavor Exploration
Putting together the right omelet ingredients doesn't have to be rocket science or even high school biology, but merely a reflection of your own tastes. You can never go wrong with the basics - ham, cheese, and onions. In the most classic sense, an omelet is a dish consisting of beaten eggs cooked until set and folded over, often around a filling. So you pretty much have a blank slate. Every now and then, try and explore outside of traditional with maybe a Mexican or Italian twist. Try these fun omelets when you have a taste for adventure.
Mexican Omelet
2 large eggs
2 tbls Half & Half
1/2 tsp taco seasoning
1/4 ts Salt
1 ds Pepper
1 tbls Butter Or Margarine
2 tbls Green Chiles; Chopped
1 x Dairy Sour Cream
Mix the eggs, half & half, taco seasoning, salt and pepper with a fork just until the whites and yolks are blended. Heat the margarine in an 8-inch skillet or omelet pan over medium-high heat. When the margarine just begins to brown, the skillet is hot enough to use. Quickly pour the egg mixture into the skillet.
Slide the skillet back and forth rapidly over the heat, and at the same time, stir quickly with a fork to spread the eggs continuously over the bottom of the skillet as they thicken. Let stand over the heat a few seconds to lightly brown the bottom of the omelet. (DO NOT overcook; the omelet will continue to cook after it is folded). Tilt the skillet; run the fork under the edge of the omelet to loosen it from the bottom of the skillet. Sprinkle with the cheese and chiles.
