Breakfast Techniques . To Flip or not to Flip?
Making the perfect omelet can be an art form in itself. Turning the omelet on the other hand, is a separate matter. People all over the country use various tricks and techniques to make sure that the end result doesn't end up as a pile of scrambled eggs, so the best way is to choose what suits your own taste and skill level.
The most basic approach is to forget about the flip. Wait till the omelet is almost cooked through, then add your ingredients and fold both sides into the center. If you want to test out more of your culinary skills, try making the classic French omelet. Using a spatula and starting from the handle side of the pan, fold one third of the omelet over the center. With a serving plate in one hand, grasp the skillet in the other, palm up and tilt so the omelet rolls over onto the plate.
For beginning cooks who like both sides well done, cover the omelet with a plate, flip the skillet over, then slide the overturned omelet back into the skillet. After you add your additional ingredients, just fold one side over with a spatula to get everything hot and melted. If you're looking to have both sides cooked and also want to forget about the flip, put the pan in an oven and broil for 4 to 5 minutes after the underside is slightly browned. Fold with a spatula and serve hot.
