Green Onion Omelet Spirals with Asian Aioli

INGREDIENTS:

6 eggs
1/3 cup finely minced green onion
2 Tbsp minced water chestnuts
2 Tbsp grated carrot
2 Tbsp minced red bell pepper
1/3 cup water
Aioli
1/2 cup plain yogurt
1/4 cup mayonnaise
1 tsp soy sauce
1 clove garlic, crushed
1/2 tsp minced ginger root
1/2 tsp grated orange peel
1 Tbsp snipped mint
1 tsp black sesame seeds
garinsh- watercress sprigs and orange wedges


DIRECTIONS:

Whisk together the ingredients for the omelet till well blended in a medium bowl. Grease an eight inch round microwavable -safe baking dish. Ladle half of the batter into the dish. Cook on high till the omelet is firm and dry, 11/2-2 minutes. Let cool completely then remove from the dish and roll up. Slice into 1 inch spirals and place on a platter. Repeat with the rest of the batter. Combine the ingredients for the aioli in a small serving dish and place on the platter. Garnish the platter . Serves 4-6.
